World’s Best Southern Sweet Potato Casserole

My momma was my best friend.  She was a loving and wonderful woman, just as much as a pain in the butt as me, and there’s not a day that goes by that I don’t miss her.  She passed away when I was a senior in college, and one of the things I miss most about her was her wonderful comfort food.  And everything she made was comfort food for me!  Lots of good memories started around our dinner table!  And for that, I am thankful.  :)

This is our family sweet potato casserole recipe that we had EVERY Thanksgiving, Christmas, and Easter.  It’s the way sweet potatoes are supposed to be:  no marshmellos!  I love it.  It’s simple, classic, and delicious.  So, in honor of my mom, here is our FAVORITE Thanksgiving dish!  Make sure you make it with love!

In a large bowl mix with blender:
-About 8 sweet potatoes, boiled & peeled
-4 eggs
-1 cup milk
-1 and 1/2 sticks melted butter
-1 cup white sugar

Put in a 9×13 in glass baking dish.

Topping:
-1/2 stick melted butter
-1 cup brown sugar
-3 tbsp flour
-1 cup chopped pecans

Mix in small bowl, sprinkle over top.  I actually double this because I’m a fattie.

Bake at 350 for 20-30 mins

Thanks, Mom :)  I love you.

Christmas is Caring!

I know some peeps tend to get their knickers in a bunch when Christmas decorations start coming out “too early” and when Jingle Bells is on the radio before Thanksgiving.  But when we’re talking about some aspects of Christmas, the earlier the better.  Personally, I’d be cool with year-round Christmas tunes and decorations.

In addition to Child’s Play, another Christmas cause that Clutterhome happily supports is Operation Christmas Child.  It’s so easy to do, and it could really make a difference in the life of a child.

Shoeboxes full of small gifts are collected and shipped around the world to children who otherwise may never know the joy of receiving a Christmas gift.  What a fun and easy way to show the love in your heart to someone you’ve never met!

I know a lot of people usually ask “What should I put in my shoebox?”  They suggest small toys, school supplies, or even some candy and hygiene items.  Anything you think a child would like would be great, though!  Here are some ideas to help get your wheels turning.

1.  Small musical instruments
These can  be enjoyed in any language by almost any age!

2.  Small games like marbles, bouncy balls, etc

The missionaries can always help explain what everything is!

3.  ”Exercise” toys like jump ropes

Kids around the globe love to run and play.  Simple pleasures!

4.  Small toys

We figured any little boy would have fun with plastic dinosaurs.

Items can go in a cardboard or plastic shoebox.  I like using plastic, though, because (depending on the recipient) the box may be the ONLY thing they own where they can store stuff.  I figure that’s worth the extra $2.

Bonus points if you get a cute kid to help you pick out the gifts and pack the box!  My Girl Scout Troop loved making boxes for girls their age, and you can see that the Clutterbaby did too.

Do you have any unique ideas for packing a box for Operation Christmas Child?  If so, please leave us a comment!  We’d love to try new things next year!

It’s the Most Wonderful Time of the Year!

Well, not exactly today . . . but I do love the Christmas season!  However, my poor little nugget got some shots today and is feeling a little under the weather.  If he’s not sleeping, he’s screaming.  I wouldn’t visit our home today if I were you.  But I did set up the dusty ol’ Christmas tree last night, so it’s kinda festive even in our misery today!  Christmas is great like that!

Logi Bear and I were going to work on some boxes for Operation Christmas Child this afternoon to share with you, but we’ll have to postpone that until he’s feeling better.  Instead, I’d like to introduce you to a charity that we here at Clutterhome happily support, especially when Christmas rolls around.  We love it for many reasons, especially since we can do it from anywhere in the world.  Clutterhome is portable and we move every two years or so.

Penny Arcade’s Child’s Play is an ideal way for generous nerds, like my husband, to give back.  Hospitals around the world create Amazon Wish Lists for things like video games to be used by sick children when they’re patients at the hospital.  You can choose a hospital from their donate page and it takes you directly to the Amazon Wish List.  When you make a purchase, it’s shipped directly to the hospital.  What does that mean?  No extra costs!  100% of your tax-deductible donation goes towards helping sick children around the world.  Yes, video games help them!  Their happiness and a positive attitude about the hospital is an important part of treatment.  :)

This is a cause we like to support.  It fits in with our nerdy family values, and helps remind us to keep Clutterhome a place with dishes in the sink and love in our hearts.

What are some ways you and your family like to give back?  Leave us a comment :)  We love a good cause and might want to help support your charity of choice.
