Easy Two Ingredient Pumpkin Waffles

 

Welcome to another edition of While my Newborn Napped.  I totes just made that up on the spot, but it should be my new catchphrase because these days, if any cooking is going to get done then it’s got to be (are you ready for this?) while my newborn naps.

Yeah, not really.  I tried.  As my newborn was napping on my lap this morning, I was cruising Pinterest like a good Momma.  I found a neat link that pointed out you can cook things like hashbrowns and brownies on your wafflemaker.  Sweet!

I got to thinking and decided to give my new go-to fall potluck recipe for muffins a whirl.  Best idea I’ve had in a while!  Here are the ingredients for my super easy, no-fuss Pumpkin Waffles: 

The recipe actually calls for Spice Cake mix, but I had carrot so . . . carrot it is!  Here’s where it gets tricky, folks.

Mix the pumpkin and cake mix.  Put it on the waffle maker.  Cook it.  Done!

I melted some canned cream cheese frosting to smother it drizzle on top.  Most grown ups would probably consider this a desert food, but I’m going to feed it to my husband for breakfast.  We’re a sweets-for-breakfast kind family.  This is probably why I have a 10 week old but am still up 10 pounds from my pre-pregnancy weight.  Life goes on :)

The consistency isn’t going to be like a normal waffle because the pumpkin doesn’t cook to that texture.  It’s a little . . . mushier?  That sounds awful, but it’s so yummy and I devoured two of them while my newborn napped.  If it seems like it didn’t cook all the way through (like a couple of mine did) that’s okay since none of the ingredients are raw and it’s still scrumdiddlyumptious.
